Rice doesn’t boast the highest worldwide production. That first-place trophy goes to maize, or corn. However, this second-place is no also-ran: maize is grown for other reasons than human consumption. For instance, it’s used for animal fodder and in the production of biofuels and materials. Rice is the most important grain for human consumption, with more than 40,000 varieties, grown on every continent except Antarctica.
